Local Server in background

I can get the server running with java -jar server-0.40.2.jar -dataFolder ~/Blynk & just fine, but when I close the terminal window on my Mac, service dies.

Correct… just like any other type of computer, if you want background operation (of anything, not specific to Blynk Server) you basically need to find a way that works for you for starting it automatically at boot, and running in background until told otherwise.

I don’t use Apple products… but Google knows
