I am creating a simple on off relay. Is it possible to have the Blynk switch associated with two digital pins? For example when switch is off D7 = LOW & D8 = HIGH. and vise versa when switch is on.

Sure… Eventor should allow simple conditional control of direct pin manipulation, but going the coding and Virtual Pin route will give you the best overall control for anything fancier than simple pin toggling.
